Death has empathy but is also a bit naïve at times (though he learns quickly). Granny has wisdom but is prideful and a bit unworldly. To me, they represent the best and the worst virtues of humanity. Granny Weatherwax is perhaps my favorite character of all with Death and Rincewind tied for a close second. I list these specifically because they take an interesting background character from earlier books and round them out, prior portrayals and consistency be damned. I like the Witch and/or “middle” books best, such as Wyrd Sisters, Lords and Ladies, Carpe Jugulum, Sourcery, The Last Continent, Reaper Man, and many others.
His love of danger, his irascible and disturbingly honest dishonesty, and how he gets everything done without using weapons, just his mind and his wit. Going Postal/Making Money Because Moist is one of the more interesting characters in Ankh Morpork. Interesting Times Because The Silver Hoard. Reaper Man Because DEATH, and it gives a lot of good insight into who he is and what really drives him. Moving Pictures Because of the lampooning of Hollywood, the intro of Gaspode, and *smiles* TING! Also, it's the first look at the Vetinari we see through the rest of the books. Guards! Guards! Because it's the start of the Watch, and because of how the baddie tried to use the story to gain power, sort of like how Lily Weatherwax did, but in a more subverting expectations kinda way. I can't narrow it down to just one, but my top five have to be, in no particular order:
